Our diet before 1/1/09 was not "almost all processed," and was far more healthy than that of most Americans. However, I now have cut almost all processed foods out. I don't buy all organic because of the extreme mark-ups. I've done quick calculations, and we can't afford to do it 100%. I'd like to, but $$$ is always an issue! We do when we can, though. <BR/><BR/>Anyway, my strong intuition is that making a switch away from almost all processed foods to a grains/beans/veggies diet is a far bigger change than switching from non-organic to organic.
